I don’t really have a serious threat model. But if I host a VPS, I might as well do it with a privacy respecting company if the cost difference isn’t massive.
Preferably something under $15 per month. I’m not necessarily looking for the cheapest, but the best general value per dollar ideally.

Second uberspace. There’s also Manitu, a green hoster from Germany, and Hostsharing, a hosting coop.
Privacy partly depends on the jurisdiction the VPS is hosted under. Currently, European GDPR is what gives the most default protection by law, so I’d choose a host inside the EU.
Book a vm in a cooperative where you control the board as a member of the cooperative. In Germany there is Hostsharing, a cooperative founded in 2000 dedicated to green hosting, open source, privacy and security.
How can I find a list of hosting co-ops I can participate in? I am in the US but the idea seems cool. Would I be able to participate in a German one? I am actually not very opposed to a bit of extra latency.
hostsharing.net is the only hosting coop in Germany. But the website is German only, sorry.
njal.la and 1984hosting have very good reputation in our circles. I would add that for most cases when a strong Nation State adversary is not part of your threat model, a proper workers cooperative is even better.
