As an Atlantan, I always figured the lack of our own barbecue style was because we’re kind of a “crossroads” of barbecue and just get influenced by all the other regional styles at once.
But now, I am enlightened. And also aflame.
I read top right in my head as Spicoli’s teacher in the 90’s The Stand.
This helps no one, I’m sorry.
As someone who has lived in the south. I would like to add something to this.
- Don’t sleep on Mustard Based BBQ. One of the most underrated sauce bases out there.
- If you have to add any sauce post cooking, you’re doing BBQ wrong.
- The best bbq is the one on your plate, unless you have to add sauce, in which case it’s the worst.
