    Ok, real talk:

    For baking, mix 1 tablespoon ground flaxseed with 3 tablespoons water and let sit for 2 min. This replaces 1 egg. The taste will obviously be a bit different, so consider only replacing half of your eggs if needed. Easier on your wallet and on the chickens.

    For ‘plated’ eggs, consider a tofu scramble instead. Get some ‘firm’-grade tofu, whip it up just like an egg, add spices to taste, and cook it in a pan until the water evaporates (tofu is precooked, so no worries about needing to cook it until ‘done’). Good for you, good for the environment too.

    Just Egg is a product that makes a great scrambled egg or omelette alternative. That stuff is also ridiculously expensive though. Luckily the main ingredient, mung beans, are much cheaper than both eggs or Just Egg. Here’s a video recipe for making your own Just Egg.

    Tofu scramble is even easier to make than scrambled eggs are (no need to worry about contact-based foodborne illness!) I like making them with diced potatoes, and they go great in breakfast wraps.

      I was going to mention tofu scramble. While I don’t typically eat them plain, they can be a great substitute for quiche and other egg based dishes.
