This feels like a publicity stunt, Apple does not sell privacy, they sell privacy theater.
I’m happy to see this tangible move towards privacy though.

This, along with the ability to select default browser and email apps, could bring me back to iOS away from Google.
iOS restricts your freedom in far more ways, it’s not even possible to install apps unless they’re on Apple’s carefully curated store, which is anti-competitive and anti-free-software
