Regarding the exclamation point shenanigans, here’s a quick primer for you or for anyone else reading:
Go to https://browse.feddit.de/ and search for the community you’re interested in - Star Trek, Hockey, London, etc.
Click the little copy icon to copy the community address to your clipboard
Go back to your home instance and paste what you’ve copied in the search bar. This will trigger your home instance to federate with that community (and now it’s available not only for you but for everyone else on your instance).
Click the search result and you can subscribe to the community

I recently had some success to not search for ‘Communities’ (using the top left drop down) but for ‘All’. Then I suddenly find the community which did not show up for hours before.
I’ve mostly been using the Jerboa app, and it seems to ease this step nicely.
IIRC, there is an instance/instance sync step that has to take place, and until someone on instance A Subscribes to a community on instance B, instance A won’t sync that community automatically. On a small instance, you are likelier to be that first person. Still, that initial search should work, letting you see everything. Maybe the system is a little overloaded?
