Hey,

I am vegan for a couple of years and recently realized that I am often cooking the same stuff over and over. Nothing bad about that - my diet is relatively diverse, healthy and tasty but I kinda would like to try some new stuff.

What are y’all’s absolute must-try banger recipes?

    My go-to meal is Cajun pasta:

    Boil whatever pasta you like (I use farfalle/bowtie). While that’s going, slice and pan fry some onion and bell pepper plus a sausage meat substitute (if you want, optional). When the pasta’s done and drained, add some crushed tomato, a few dollops of vegan cream cheese (I use Kite Hill), and a large amount of Cajun Spice Mix and mix to get a creamy red sauce. Then just throw everything together.

    Pretty easy to cook. Sorry I can’t list the proportions because it’s all by feel. Really though, it’s hard to go wrong (I suppose you could over season with the spice mix, but that has yet to happen to me).

      I sometimes add that to my muesli. :) It’s pretty good! :) But sounds also like a nice comfort food for every now and then :)

    A super simple and delicious meal is Ful Mudammas, which is popular in different arabic cuisines in slightly different variations.

    It’s basically:

    • Fava Beans (Can be found in any arabic stores)
    • Tomatoes
    • Onion
    • Parsley
    • Olive Oil
    • Lemon Juice
    • (And pita bread as a side dish)

    You cook and mash the fava beans and add the other incredients after cooking and eat it with Pita Bread. But of course there are dozens of variations. You could also add garlic, cumin, chili, chickpeas, …
