I’ll trust anything J. Kenji López-Alt puts out. It solves the mystery of the dough. The rectangular pans recommended are pretty pricey, though. There are more affordable ones out there in larger sizes.
Yes that’s the recipe. I bought non stick pans from the local dollar store. And I cannot find Brick cheese so I use cheddar. Other then that I follow the recipe. It’s really amazing pizza. I make it probably every 2 or 3 weeks.

No, I bought “Betty Crocker” pans from my local Dollar store. I think the brand must be Chinese owned now. I also didn’t do the rows of sauce cheese. I like my sauce and I love cheese so I covered the whole thing with both.

OMG it really is. The crust is incredible, crispy and fluffy at the same time. The crispy melted cheese edge is addictive. Cannot recommend it enough.
