Yeah it’s a good jury rig, but lots of improvements are possible.
A closed chamber would be nice. Add in a fixed, much thinner metal disc that would do the press on a simple worm gear or something. Add some piping for the apple juice into a closed container, and you have something more food safe and easier to use.
I would use an extension so the shit doesn’t rattle off my impact into the apple juice.
