‘Open by Default’ in app settings though I would have thought once you installed, it would have asked which app player you wanted to set as default. I always select ‘Just Once’ because sometimes popup player is preferred over video player or background.

Edit; NM figured it out, in newpipe settings under “behavior” “video open option” I just switched to “always ask” so I can see how the different options work as I get familiar and then will choose the one I prefer.
Something like
Settings > apps> default apps > opening links > newpipe
Then select the urls you want to open in newpipe.
Also select the YouTube app and don’t allow it to open links
Yes. You can make it the default YouTube player on android, so you click a YouTube link and it opens in the newpipe app.
