The crabs are European green crabs.
Unfortunately:
While Fisheries and Oceans Canada says recreational and Indigenous harvesting of shore crabs for food — including European green crabs (EGC) — is permitted with a license, commercial fisheries cannot sell them for human consumption.
The licenses are pretty cheap. I wonder if it counts against your quota or not… if not, I can see people eat them right up for sure.

Yeah, one of the greatest conservation methods is hunting. It works really well (except for feral hogs in Texas; nobody likes hunting those).
