What kind of bread is it?
White bread, everything bagel spices, butter as it’s fat base, 20% previous dough used in it, and with an egg. The wash is milk+egg applied twice.

How do you make the strips on it?
I took a knife and ran it along the dough right before putting it in the oven. The process is called bread scoring.
