How does it compare with etherpad?
Thia does not look like Google Docs alternative. Readme.md says that it is much more limited, with the purpose of simplicity.

Check out OnlyOffice anf Collabora office. Both can be integrated into NextCloud.
Or CryptPad, that is also good one.Then go a step further and check out OpenDesk, a project that aims to be a collection of various FOSS services in order to create an alternative to Microsoft Office 365 / Google Suite.

I would be more comfortable if this Google Docs alternative wasn’t hosted on a French government server.

Honestly, it looks quite nice. I think I’ll have to give it a spin.
