There really is something to that, the non stick surface you can get if you never introduce acid or meat. Used mayonnaise to season a dutch oven and fry pan over time after seeing what mayonnaise slathered bread used to make grilled cheese sandwiches did over time to a flat top. The dutch ovens for rye bread, skillet for corn.

Gumbo, if you know how to cook it, is the same basic thing as split pea and ham soup, if you’re doing that right. It’s a classic “same thing but local ingredients” deal, French cooking by way of the Acadians down to Louisiana.

For me, smoked Gouda and cave aged cheddar and a little pecorino romano if I’ve got it.
Roughly 4-5g of sodium citrate per 100g of cheese. Use water or milk, start with a half cup and add more as you need it, honestly there’s more than enough fat content in the cheese that it won’t make a difference. Shred cheese and add to simmering water. Keep adding cheese until everything is in the pot, and the sauce is perfectly smooth. There should be no lumps. Add more water or milk to desired consistency, and add some mustard powder, cayenne, and garlic. And salt to your preference. It’s the creamiest Mac and cheese you’ll ever have, and the depth of flavor is game changing. I promise you.
You can even take it to the next step with caramelized onions or shallots and some crumbled sausage. Finish with some bread crumbs, a little paramesian, and some smoked paprika on top, and toss it under the broiler for a minute to toast up.

Juneteenth does not celebrate the abolishment of slavery. It celebrates the news arriving in Houston. New Jersey had slavery six months after juneteenth. Also it only freed men.
I have never seen anything that says the Emancipation Proclamation or the 13th Amendment only freed men. Do you have a source for that?

Was it legal to own a slave who was a woman? Did women legally have the same rights as other women, regardless of skin color?
Clearly there weren’t equal rights, just as clearly as the end of slavery didn’t mean the end of racism, but this event is significant enough to stand on its own
