Here is one of the chickens we harvested yesterday. This is what I do to them when I part them.

Upper left are the carcass, skin and bones, and wing tips. Upper right is the wing parts. Bottom left to right are boneless skinless beasts, legs, and boneless skinless thighs.

We setup a production line with the chickens coming in from the left, being parted, and the parts bagged. I stand on the near side doing the cutting and my wife stands on the far side handling the bags.

The chickens come in from the outdoor fridge in big bags in the wheelbarrow.

    It’s very different the way we do it. Homestead farming that takes advantage of seasonal windows instead of heating and cooling the birds is much easier on the environment. If everyone got their chickens and even their other meats from small, local farmers who practice traditional farming methods we would ask be a lot better off
